I have never been a huge fan of scan bran, in my opinion it tastes horrible on it’s own and I can’t say it smells great, not a good way to start the recipe I agree but I tried this cake once before and I hated it, I threw it away! This time though it was lovely plus it’s so filling, here’s what I did…
You’ll need:
5 scan brans – (Hexb)
1 tsp of vanilla essence
3 tablespoons of sweetener
2 beaten eggs
Handful of raspberries or any fruit you prefer (optional, if cooking then you will have to syn)
First start by soaking your scan brans in hot water for a couple of minutes then drain and mix them up.
Then mix your eggs, sweetener and vanilla essence in a bowl, you’ll then need to mix this in with the scan bran, you want to make sure you’ve combined it well so there’s no big chunks of scan bran left.
I then added raspberries to this which is 2 syns but you don’t have to do this. Some recipes add in hot chocolate power which is something you could do at this stage.
Once all the ingredients have been mixed in you can they spray your tin or tray with some frylight, I use the coconut one as it gives it a nice flavour.
Poor the mixture into your tray and bake for roughly 30 minutes, it’s the same method as baking a cake, you can test this by putting a knife in.
Then enjoy! It doesn’t look that big in the photo but it is, the whole thing is 2 syns and I must admit it’s hard to eat it all because of the fibre it’s very filling.
