Slimming World Recipe: Syn free pancakes

Being on Slimming World doesn’t mean you’re not allowed to eat any of the things you like, if you want pancakes you can still eat them 🙂

I was looking around trying to find a syn free recipe for pancakes that didn’t use up my healthy extras, I found a recipe which I slightly adapted, I must admit they don’t taste exactly like pancakes but they do the job.

Pancakes
1 egg
30ml of two chicks egg whites (optional)
3 tbsp sweetener
1 tbsp vanilla essence
1 tbsp cinnamon

Toppings
1 banana
1 Muller light toffee yogurt

First separate the egg yolk and egg white, then add in the extra egg white if you’re using it. Mix together the yolk, sweetener, cinnamon and sweetener in a separate bowl.

 

Whisk the egg whites until you get soft peaks, then add in the yolk mixture.

Once it’s all mixed together spray the frying pan with frylight, I used the coconut one but you can use whatever one you like. Wait for the pan to heat up before adding blobs of the mixture to the pan. I made mine quite thick but you can make them thinner and flatter.

Cook for 3-4 minutes on one side then flip over and cook the other side until they’re brown.

Then once they’re cooked serve them with your topping of choice.
